"Evoli" Campania IGP Aglianico 2019

Another great red from the territory. Yet another great wine from an indigenous grape variety. Once again the fruit of a pure Aglianico from one of the most interesting areas of Campania. We are in Eboli, in the province of Salerno, and this red wine proposed by Rossella Cicalese is a tribute to its city of origin. Evoli, in fact, is the medieval name of the town of Eboli, where the company has its historic vineyards and where the Aglianico grapes used here ripen slowly until the beginning of October. Careful vinification, with destemming, mashing in steel and fermentation by spontaneous yeasts at a controlled temperature. After racking, the wine undergoes its malolactic fermentation in steel and an ageing period of 5 months. Only then is it ready to be bottled. This period of rest is essential to best balance all the grape's characteristic angularity. Ruby colour tending towards violet, the nose reveals very clear hints of morello cherry and plum, followed by spicy notes, such as pepper. In the mouth, the alcohol is noticeable, making the wine pleasantly warm and ethereal. Soft and enveloping from the first taste, this red wine from Campania has, as is normal, very noticeable tannins. A strong but pleasant sensation, thanks to the good balance between all its components. A perfect wine for Mediterranean cuisine and its decisive flavours. Excellent with parmigiana, first courses and meat, especially lamb.
