Marese, Castel del Monte DOC, comes from a pure processing of Bombino Bianco grapes, a native Apulian variety that here, in the Castel del Monte area, expresses itself at very high levels. To produce it, Rivera's technicians wait for the right moment for the harvest. The grapes, in fact, must be at an advanced stage of ripeness, to better balance their natural acidity and thus express their varietal character to the full. Fermented in temperature-controlled stainless steel tanks, this white wine matures for 2 to 3 months on its lees in vitrified cement tanks before being bottled. Straw yellow with greenish reflections, it has fresh and fruity aromas, with notes of green apple. In the mouth it is pleasantly mineral, well supported by a natural freshness. Excellent with appetizers and fish dishes. It also gives great satisfaction when served as an aperitif. Our guests will easily suggest continuing with the same wine for the whole meal.
