Do you know that feeling of gentle freshness that you get in the first days of spring? Pieropan's Soave Classico DOC is just like that: a wine that gently awakens the senses, like a spring breeze. It is produced exclusively from the Pieropan family's own vineyards, located in the classic Soave DOC area, on hills between 100 and 300 metres above sea level, with west-facing exposure. The soil here is largely volcanic, with limestone veins. This promotes good drainage and gives the wine a perceptible mineral note. The vines range in age from 6 to 60 years old and are planted using traditional systems such as the Veronese pergola and Guyot. The Classico designation certifies that the grapes come from the historic and most suitable area of Soave. The blend is composed mainly of Garganega and Trebbiano di Soave. The former provides the main structure, fruit and aromatic component. Trebbiano adds freshness and lightness and helps to balance the wine, making it more lively. The grapes are harvested by hand when perfectly ripe. Trebbiano is harvested in mid-September and Garganega in October. After harvesting, destemming and soft pressing, the free-run juice is selected and fermented at a controlled temperature in vitrified cement tanks. At the end of this phase, the wine is aged in the same tanks, in contact with the fine lees, until the spring following the harvest; then the wine remains in the bottle for a while before being released on the market. In the glass, it has a beautiful light straw yellow colour, bright, with young greenish reflections. The nose offers fresh and delicate aromas and gentle fruit. A hint of almond or marzipan can be detected in the finer notes. On the palate, it is dry, savoury and well-balanced. The freshness of the acidity blends with the mineral component, resulting in a harmonious and pleasant wine; the concentration of fruit is not excessive but clearly perceptible. The finish is clean, with a fruity return and mineral notes that leave a good persistence. Designed to be drunk young, when its fresh and fruity qualities are at their best, it works very well as an aperitif, perhaps with light finger food, olives and fresh cheeses. Excellent with simple first courses, especially those with vegetables, or with delicate fish dishes: steamed fish, crustaceans and molluscs.
