Discovering Colosi: Cariddi

The freshness of Insolia and the minerality of Catarratto. This is the 'secret' recipe of this interesting Terre Siciliane IGT proposed by Cantine Colosi. The grapes come from the estate's vineyards in Sciacca, in the province of Agrigento, and Salemi, in the Trapani area. Here the soils are clayey and guarantee full ripeness to the grapes used for blending. Harvesting takes place in the second ten days of September. After the harvest, the grapes are soon taken to the cellar to be crushed, maintaining fragrance and primary aromas. The must is then fermented in stainless steel tanks at a controlled temperature and, at the end of this phase, the wine is aged for at least three months in stainless steel tanks, followed by a further two months in the bottle. Pale straw yellow in colour with greenish highlights, the nose reveals fresh aromas, with sensations of white flowers and a generous fruity component. In the mouth, however, it reveals a pleasantly balanced wine, between fruit and freshness, and characterised by a long persistence, capable of prolonging the pleasure of drinking for several minutes. Perfect with fish and seafood dishes, this Sicilian white is also excellent as an aperitif.

Fresh and immediate. This is how a good Sicilian rosé should be. And so, without a doubt, is this 100% Nero d'Avola, vinified in pink proposed by Cantine Colosi. But let us proceed with order. First of all the harvest, which takes place during the second ten days of September. At that point, the grapes have had a chance to reach perfect ripeness, thanks to the warm sun and the island's Mediterranean climate. Ripe, yes, but still with the right degree of acidity, to be sent to a partially white vinification, with brief maceration of the skins, until perfect colour extraction is achieved. This is followed by a temperature-controlled fermentation phase and refinement in steel tanks, again at a controlled temperature. All done in full respect of the starting raw material, to obtain a perfect wine to drink young. Brilliant pink in colour, the nose expresses intense hints of red fruit and clear vinous notes. In the mouth it is pleasantly savoury, fresh and harmonious. Balanced and with good persistence. Ideal to uncork as an aperitif, it is also perfect with white meat dishes and cured meats.

Terre Siciliane IGP, this red wine from Cantine Colosi is a young, ready-to-drink wine. A fine chalice that is made from 70% Syrah, international by origin but Sicilian by adoption, and Nerello Mascalese for the remainder. The latter is an autochthonous variety par excellence, typical of the eastern side of the island. In this case, the grapes come from two different areas. Part from Riesi, Caltanissetta, and part from Mazara, Trapani. Harvested when fully ripe and carefully vinified, this 'made in Sicily' red wine is only processed in steel tanks to preserve the freshness of the initial fruit. In the glass it has a beautiful intense ruby red colour. The nose is intense and fruity, with herbaceous hints and a typical spiciness brought by the Syrah. In the mouth it is persistent, of good intensity and great structure, with aromas of red fruits, blackberries and strawberries. Ideal with red meat dishes, mature cheeses and cured meats.
