  • Amarone della Valpolicella DOGC Casa Erbisti is one of the flagship wines of the Monte Cillario winery. We are located in the heart of the province of Verona, right at the start of the Strada della Valpolicella. 55% Corvina, 25% Corvinone and 15% Rondinella, the blend of this wine is completed with a small percentage, about 5%, of other local varieties. What is certain, however, is that only the best grapes go into the making of this Casa Erbisti, which are carefully picked and selected before being sent to the slow drying process. Only after they have lost about 30 to 40 per cent of their weight are the grapes gently pressed and left to ferment slowly at a controlled temperature. For the maturation phase, the wine is then placed in 500-litre tonneaux for a period of about 36 months. A very intense red, with garnet-coloured highlights, the cherry and morello cherry notes stand out on the nose. Leaving the wine to oxygenate for a few minutes in the glass, the bouquet slowly builds up to aromas of raisin fruit under spirits, with hints of tobacco and spices due to the noble moulds formed during the drying process. In the mouth, however, it is fully fruity, round, soft and warm. A true flagship of Valpolicella. Excellent with meat, provided it is tasty, and with mature cheeses. Ideal as a meditation wine, it also goes well with chocolate desserts.

    It is the first winery on the Valpolicella Road. We are in Parona, on the outskirts of Verona. We are talking about the Azienda Agricola Monte Cillario, founded in 2009, after having conferred its grapes to the Cantina Sociale di San Pietro in Cariano for 50 years. An expression of a history, made up of families and generations, that intertwine and unite to create wines of immediate pleasantness, with intense and varietal aromas that evolve with ageing. It covers a total surface area of 30 hectares, 90% of which are planted with vines and 10% with olive groves. All production processes take place in the winery, from the receipt of the grapes to the ageing and bottling of the wines. The company's range includes all the wines of the region, from the vintage Valpolicella to the prized Amarone della Valpolicella Riserva.
