  • Vinification LS Cheurlin's Extra-Brut Coeur de Chevalier is a very fresh champagne. This connoisseur champagne is produced from two plots located in the Côte des Bar. The Dalivard parcel, facing north of Celles-sur-Ource, houses 20-year-old Chardonnays. The Les Fioles parcel, located south of Merrey-sur-Arce, is home to 40-year-old Pinot Noir grapes. These two plots have been cultivated organically since 2006. They benefit from natural grassing alternating with ploughing so that the soil can fully reveal its terroir. This champagne is made from a blend of 70% Pinot Noir and 30% Chardonnay. The extra-brut dosage of this cuvée (2 g/l) allows this champagne to fully express its aromas. It is a wine in the image and likeness of its terroir, naturally carried on red fruit aromas and enhanced by a great freshness that will surprise you.

    Champagne "Coeur de Chevalier" Extra Brut
  • Called Coeur de Chevalier, it is an interesting Extra Brut Champagne, offered here by Maison L&S Cheurlin. An organic wine with a fresh and refined style. For this wine, the small maison reserves two of its best plots, Dalivard and Les Fioles, both located in the Côte des Bar. The first is cultivated with Chardonnay, with plants around 20 years old and a northern exposure. The Les Fioles plot, on the other hand, is located south of Merrey-sur-Arce. This is where the oldest vines, some 40 years old, produce the best Pinot Noir. Champagne Coeur de Chevalier is made from a blend of 70% Pinot Noir and 70% Chardonnay for the remainder. The particularly low dosage (2 gr/litre) allows this wine to fully express its aromas. Fine and delicate perlage, the nose is fresh and mineral, with notes of red fruits revealing great freshness. In the mouth, it expresses itself with elegance and refinement, in a perfect balance between softness and mineral freshness. This Champagne is ideal with hors d'oeuvres and fish dishes, but also with white meats.

    The history of Maison L&S Cheurlin is closely intertwined with that of its terroir: the Côte des Bar. It is here, in fact, that the company boasts ancient roots dating back as far as 1881. At that time, Edmond Cheurlin, a passionate winegrower and staunch defender of the Aube's heritage, took part in the great 'Champagne revolution' led by the winegrowers in the south of the current appellation area, finally obtaining recognition of the Champagne appellation even in the southernmost part of the region. Despite the difficult years of economic crisis and world wars, Edmond's son Raymond decided to start producing and marketing his own wine, selling directly to private individuals. Leading the company today are the founder's two great-grandchildren, Lucie & Sébastien.
