Piedmont, and in particular Alta Langa, is a land of choice for the great French vines, the basis of sparkling wine. Like the Chardonnay that in the vineyards of Bossolasco, in the Contratto, is able to express itself with fruits of great quality, able to wait and mature for years. From 100% Chardonnay grapes comes this fragrant and refined Blanc de Blancs, the result of an accurate selection in the vineyard and of a careful processing that starts with destemming and soft crushing, without pressing the grapes, in order to obtain only the best juice. This is followed by a first fermentation in stainless steel tanks and, after a refinement of about 9 months, a second fermentation in the bottle. Maturation on the yeasts lasts for at least 36 months. Afterwards, a manual remuage and disgorgement are carried out. Brilliant straw yellow, this sparkling wine has a fine and incredibly enveloping perlage. On the nose, it is pleasantly floral and fragrant, with distinct hints of almonds, tropical fruits and brioche. In the mouth it is above all enveloping and elegant, with delicate notes of small white flowers and minerals. An excellent aperitif wine, it goes well with savoury but delicate dishes such as spaghetti allo scoglio, preferably in white.
