Pinot Noir expresses itself best in Trentino. Provided, of course, that the soil and exposure are congenial to the capricious vine of Burgundian origin. It does well, for example, in hilly areas with altitudes up to 700 metres. Well-ventilated slopes with gravelly soils and perfect exposures. Those of Concilio are cultivated with Guyot and spurred cordon, all rigorously at low productivity. The Mokner comes from a careful selection in the vineyard and fermentation in stainless steel containers of small capacity at a temperature of 22-25 degrees C. After malolactic fermentation, the wine is aged in barriques for 15 months. Bottling takes place, without filtration, after the wine has been left to rest for another three months in inert containers. A wine capable of ageing for a long time in the cellar without fatigue, in the glass it has a beautiful soft ruby red colour. The nose is dominated by notes of red fruit, especially black cherry and morello cherry. In the mouth it is harmonious and soft. Almost caressing, with a very fruity aftertaste. The notes of morello cherry and black cherry return, which are well integrated with the slight sensation of roasting. The body is rightly medium but overall it reveals itself to be a very pleasant, delicate and elegant wine.
