    • Barbera Superiore La Zerba from Cantine Volpi shows how an extremely popular grape variety can turn into a refined experience when its roots sink into the right soil. We are in Tortona, in that corner of Piedmont that looks toward Lombardy and Liguria. Here the hills enjoy a particular microclimate where the cool currents of the Apennines meet the protection of the plain. Cantine Volpi has chosen to work organically here, respecting the cycles of nature in order to obtain healthy and authentic fruit. Barbera, in particular, expresses a unique personality thanks to the composition of the soils, rich in clay and marl. The designation “Superiore” assigned to this wine is not simply a courtesy title. It indicates that the wine follows stricter production rules, with lower yields per hectare and a mandatory aging period that gives it greater depth and longevity than the basic version. After destemming, fermentation takes place at controlled temperature. The maceration is prolonged in order to extract all the color and structure required. Afterwards, part of the wine rests in stainless steel to maintain the crisp fruit character, while another part is aged in wood. This step is not meant to cover the wine with vanilla aromas, but rather to soften the edges and harmonize the structure, making the sip flow like silk. In the glass the wine shows a deep ruby red color that over time may reveal fascinating garnet reflections. On the nose it is an explosion of red fruits: sour cherry, redcurrant and ripe cherry appear immediately, followed by a spicy hint of black pepper and a touch of vanilla. On the palate the vibrant acidity typical of the variety dances with elegant tannins and a savory texture that adds depth. The finish is long and clean, with a pleasant return of aromatic herbs. At the table it is an unbeatable all-rounder. It works wonderfully with a simple board of Piedmontese cured meats, but it is also perfect with tajarin with meat ragù or with a classic Sunday roast.

      With over a century of history behind it, Cantine Volpi of Tortona has passed through five generations, transforming from a small town osteria into an international point of reference, without ever losing the compass that points straight toward the authenticity of the Colli Tortonesi. Everything began in 1914, when the great-grandmother Cristina, together with her children, purchased the osteria “Il Cappel Verde” in the center of Tortona. At that time wine was sold by the glass and Barbera was already the undisputed queen of local tables. From that wooden counter began a journey that led the Volpi family to recognize, before many others, the potential of an area nestled between Piedmont, Lombardy, Liguria and Emilia-Romagna. Today the winery is led by Carlo Volpi, joined by his wife Laura and their son Marco. If there is one thing that distinguishes their approach, it is foresight. Already in the 1990s, when organic farming was still a concept for a few “visionaries”, Carlo firmly believed in it. This philosophy found its fullest expression in Cascina La Zerba in Volpedo, acquired in 2003: here about 10 hectares of vineyards are cultivated under certified organic farming.
