  • Sensations Colour: straw yellow with greenish reflections. Bouquet: Fresh with notes of white-fleshed fruit, pineapple and nettles. Mouthfeel: Dry, harmonious, it reveals a marked sapidity and a great freshness, which is enhanced by the delicate perlage.
  • Vinification The carefully selected grapes are macerated for 24 hours at a low temperature, followed by soft pressing and static decantation. The juice thus obtained is fermented at a controlled temperature. The resulting base wine is poured into hermetically sealed tanks where, thanks to the addition of selected yeasts, a second fermentation takes place, giving the wine its delicate perlage.

  • Like all the wines of Cantina Nicosia's Bio Vegan line, this sparkling Grillo has a double certification: Organic and BIO VEGAN. On the label it is indicated as an IGT Terre Siciliane. In the glass it has a fresh and lively appearance. A pleasantly mellow wine, produced with organic grapes, ideal as an aperitif. But you only have to taste it to discover that this Sicilian Grillo can also be a fantastic companion for vegetarian dishes and more generally with Mediterranean cuisine. Harvesting is by hand in boxes and takes place in September. The vinification of the base wines takes place in stainless steel tanks. Then it goes into autoclave where a second fermentation takes place, giving the wine its delicate perlage. Straw yellow with greenish reflections, the nose is fresh and citrusy, with notes of white flowers and herbs. On the palate, however, it is pleasantly dry, harmonious, endowed with a distinct sapidity and great freshness.
    Who knows if in 1898, when Francesco Nicosia, great-grandfather of the current owner, decided to open his first wine shop in Trecastagni, he already knew that Etna would one day become the very symbol of quality wine in Sicily. He probably hoped so. After all, even then the Etnean wine was known and appreciated throughout Europe for its mineral strength and its volcanic personality. From those fortunate beginnings, to the current management the path has been long but consistent. Today the company is entrusted to the hands of Carmelo Nicosia who has staked everything on the redevelopment of the company, investing in the expansion and renovation of vineyards, as well as in the construction of a modern processing cellar. Today Cantine Nicosia is a dynamic, modern and efficient company, able to look to the future in full respect of tradition, thanks to a young but well-trained staff. Native grape varieties and international varieties well adapted to the climate of Sicily, coexist to give life to wines of great personality, produced in full respect of the environment. The headquarters of the winery have remained in Trecastagni, while most of the company's vineyards are located not far away, at the foot of Monte Gorna, one of Etna's many extinct craters. The company also owns vast tracts of land in Vittoria, in the Ragusano area, where Cerasuolo DOCG is produced, and directly manages large expanses of vineyards in the rest of Sicily.
