Harvested when fully ripe, the Cabernet Sauvignon is delivered to the winery within a few hours. Thus begins a long process that involves vinification in red, with a long phase of extractive maceration. The skins of Cabernet Sauvignon slowly release all their colour and noble tannins which characterise it and make it particularly suitable for long ageing. Then follows a long aging in large wooden barrels. The result is a wine characterized by a beautiful ruby red colour that acquires light garnet reflections with aging. The nose is elegant, with notes of ripe fruit, vegetal hints of pepper and sweet spices. In the mouth it is structured and elegant, with soft tannins that leave the mouth smooth and clean.
