Ca' del Bosco has created yet another gem. We are talking about Franciacorta DOCG Vintage Collection Extra Brut. A wine that is extreme in its own way, where - to use a catchy slogan - purity meets power. But once again, let's proceed in order. The land of origin is the (green) heart of Lombardy, among the rolling hills of Franciacorta. This is where the Vintage Collection Extra Brut is born, thanks to a favourable microclimate and morainic soils that give the grapes unique characteristics, allowing the creation of complex and long-lived wines. The Extra Brut version is distinguished by a very low sugar content that enhances the wine's freshness and minerality. Specifically, Ca' del Bosco's Vintage Collection Extra Brut is made from a blend of 68% Chardonnay, 3% Pinot Bianco and 29% Pinot Nero, sourced from 43 certified organic vineyards. After rigorous selection, the grapes are washed and dried. This is followed by 5 months of fermentation in oak barrels for the base wines and a long ageing on the lees for 48 months, which allows it to develop complexity and finesse. Finally, the dégorgement takes place in the absence of oxygen, ensuring purity and finesse in the finished wine. Once uncorked, it is straw yellow in colour with golden reflections and a fine, persistent perlage. The nose is extremely elegant, with hints of peach, citrus, toasted hazelnut, coffee and butter biscuit. On the palate, it is fresh, well-structured and savoury, with a long, slightly citrus finish. Thanks to its structure and long ageing on the lees, the Vintage Collection Extra Brut has good ageing potential. However, it is already perfect as an aperitif and pairs well with delicate fish dishes such as sushi, carpaccio and tartare. Finally, its elegance makes it an ideal companion for fish or vegetable risottos.
