    • A young Nebbiolo that, although it does not yet wear the crown of a king, already possesses all the charisma and elegance of one. This is Bric del Baio – a promise fulfilled that brings us to the heart of the Langhe. We are in Treiso, one of the most spectacular municipalities in the province of Cuneo. Here lies Ca’ del Baio, a historic winery that has cultivated the land with deep passion for generations. The soils, composed of grey-blue marls, give the wines a solid structure always accompanied by remarkable aromatic finesse. It is said that the name “Bric” refers to the highest part of the hill – the one that looks down over everything and enjoys the best exposure to sun and winds. It is in these small plots that Nebbiolo learns to become great, benefiting from a microclimate that enhances its natural inclination toward delicate aromas. The harvest is carried out by hand, selecting clusters that have reached the typical violet shade of perfect ripeness. Here the grape expresses its full character, marked by vibrant tannins and a pronounced acidity that ensures vitality over time. Once in the cellar, the grapes are destemmed and undergo a short maceration to extract colour and the most delicate aromas before fermenting in stainless steel tanks at controlled temperature. After natural cold stabilisation, the wine undergoes malolactic fermentation directly in wood. It then rests for 12 months in large Slavonian oak casks, slowly oxygenating and maturing without the wood ever overpowering the varietal fruit notes. The colour is the characteristic garnet red of Nebbiolo, bright and transparent as tradition dictates. The bouquet is a small masterpiece of delicacy, with fruity notes recalling freshly picked wild berries and a delightful raspberry jam. On the palate it is dry and warm, harmonious and well balanced. The finish shows a pleasantly tannic persistence. Perfect alongside classic tajarin with Piedmontese meat ragù, or a board of local cured meats and a knife-cut Fassona beef tartare.

      Located in the heart of the Langhe, Ca’ del Baio is a historic winery that has been active for four generations. Founded more than one hundred years ago, it is now run by Paola, Valentina and Federica, women of wine and granddaughters of the founder. The estate covers 28 hectares, with the most prestigious vineyards dedicated to the production of Nebbiolo for Barbaresco. Among these are the estate crus of Asili and Pora in the municipality of Barbaresco, and Vallegrande and Marcarini in Treiso. These vineyards, with vines between 25 and 40 years old, produce grapes of exceptional quality that give life to distinctive and highly valued wines. The wines of Ca’ del Baio have been described by experts as “impressive and delicious”.
