This Notte Rossa, sparkling Extra Dry Rosé is indeed an interesting product. Not only because it is a bubbly "Made in Puglia," but also (and especially) because it comes from a completely new processing of Primitivo grapes, the prince of the region. With Primitivo, the winery's technicians also process small percentages of other native grape varieties. The grapes, harvested when fully ripe, are soft-pressed. The first fraction of must, the so-called "mosto fiore," is used to produce the base wine, which is then racked into an autoclave for subsequent frothing. At the end of the second fermentation, the wine remains in contact with its yeasts for about a month. Only then is it bottled and stored in the cellar for several months for a final stage of aging. A brilliant soft pink color with slight onion skin tones, its perlage is fine and persistent. The nose makes you appreciate the fresh citrus notes, well integrated with those of small fragrant red fruits. In the mouth it guarantees a full, not excessively dry, intense sip with a marked freshness. Excellent right from aperitif time, it can also be served at the end of a meal, paired with a sweet fruit salad or a nice slice of cake.
