It is called Mancinello and is the result of a pure vinification of one of the most versatile Apulian vines, Nero di Troia. Organic as a concept, Masseria Tagaro produces it scrupulously following every stage of processing. From the harvest to the transformation of the best bunches. Destemming and maceration at low temperature for about a day. This is followed by the classic phase of alcoholic fermentation, at a controlled temperature, and racking. A soft pressing of the marc completes the process. The result is an intense and rich wine, starting with its intense colour.
