"Calis" Vino Bianco 2021

Calis is not a classic Valtellina wine. It is, on the contrary, the fruit of fortunate experimentation. Of the meeting, or love marriage, between a white wine from Nebbiolo grapes, the typical Chiavennasca of the upper lake, and a white wine from international grapes. Specifically, it is Sauvignon Blanc, a French variety capable of lending a touch of aromaticity to the final blend. The grapes come from the area of Teglio, in the province of Sondrio. Processing begins with a manual selection of the best bunches, which are brought to the winery to be quickly sent to vinification. It starts with a soft pressing, followed by cold static decantation and fermentation in small stainless steel tanks by means of selected yeasts. At the end of the transformation, the wine ages, again in stainless steel, for a period of about 9 months before bottling. Characterized by a beautiful straw yellow color, the nose reveals an intense and fruity bouquet. In the mouth, however, it reveals character and personality, thanks to the use of Nebbiolo, and that subtle aromaticity that makes it more intriguing. Excellent as an aperitif, it is a fresh and pleasant wine, also easy to accompany with tasty fish dishes.
