Its unusual name, Preludio N.1, refers to a historical fact. This, in fact, was the first Chardonnay produced in Puglia, and perhaps in the whole of southern Italy. It is, if proof were needed, clear and unique evidence that Chardonnay, as the great international grape variety that it is, is able to adapt perfectly to the hot climate of the Mediterranean. And that it knows how to grow and prosper well, sinking its long roots into the calcareous soils of the Castel del Monte area. The grapes, in this case, are harvested in the second ten days of August and vinified at a controlled temperature. To give more character to the wine, after the fermentation phase it is left in contact with its yeasts for a few months. A perfect balance between complexity and freshness, this Chardonnay is suitable for a wide variety of pairings. Excellent with fish, especially if it is well-flavoured, it is a wine that we can also pair with white meats that are not too elaborate.
