    • Vinification Produced exclusively from Montepulciano grapes harvested by hand in early October. After destemming and crushing, traditional fermentation takes place in steel vats at a controlled temperature of between 15 and 17 degrees to preserve the freshness of the aromas. On the second day, the skins are separated from the liquid to obtain an excellent extraction of aromas. Fermentation continues with classic white vinification, brief maturation in steel and tartaric stabilisation. This is followed by two months of ageing in the bottle.

    "Chiola" Cerasuolo d'Abruzzo DOC 2024
    • It is called Chiola and is a magnificent Cerasuolo d'Abruzzo DOC, offered here by the Talamonti Winery. A fresh and easy-to-drink rosé wine made exclusively from Montepulciano grapes, harvested by hand in early October. Its vinification involves a short maceration on the skins for about 24 hours, followed by fermentation in steel at a controlled temperature to preserve the freshness of the aromas. After a brief maturation in steel and tartaric stabilisation, the wine is then aged in the bottle for about two months before being released for sale. Cerasuolo d'Abruzzo DOC, recognised as an independent appellation since 2010, is distinguished by its freshness, balance and versatility at the table. This Chiola is no exception, presenting itself in the glass with an intense pink colour, aromas of red berries and fresh notes of morello cherry. It is fresh on the palate, with balanced acidity. For this reason, its “creators” recommend drinking it within about two years to appreciate it at its best. It pairs well with tasty but delicate dishes such as grilled lobster or seafood risotto. It is also worth trying with slightly spicy curry dishes or, for lovers of ethnic cuisine, with dim sum.
