Across the border it is called Rebula. Hence, in Italy, its name is Ribolla Gialla, and it is one of Friuli's most beloved wines. Erzetic offers it here in a super traditional version. Pleasantly dry, white wine made from grapes harvested from vineyards over 15 years old. We are in Upper Brda, one of the most interesting wine areas in Slovenia. Terraced vineyards where, thanks to perfect exposure, the grapes are able to reach full ripeness in the second half of September. Vinified with strict temperature control, the wine matures on its fine lees until January, when it is filtered and bottled. Straw yellow in color, the nose reveals a combination of meadow flowers and ripe fruit. In the mouth, however, sweet fruit notes are complemented by a subtle citrus reminder. Perfectly balanced in all its components, this white has a delicate mineral and savory note that prolongs the pleasure of each sip for several seconds. Rebula is exceptional as an aperitif, but it also goes well with tasty dishes such as a vegetable tempura or a sweet prosciutto (San Daniele, of course).
