Rosalita is a modern rosé from Salento. Delicate in appearance, it is made from Negroamaro grapes vinified in pink. The grapes are harvested in September and, once arrived in the cellar, are cryo-macerated for about 6 or 7 hours. Immediately afterwards, the skins are separated from the must, which has now reached the right "pink point" and can continue its soft vinification process and then finish its refinement in steel. The result is a wine that is simple to taste and easy to pair, especially with delicate summer dishes or aperitifs. Soft pink in colour, Rosalita has delicately fruity and floral aromas, with clear hints of roses. In the mouth, then, you discover a wine characterised by a pleasant taste, soft and fresh at the same time. The subtle sapidity prolongs the pleasure of drinking for several seconds. Truly satisfying. The important thing is never to run out. It is better to keep a second bottle ready in the fridge.
