Planties bianco, in German 'weiss', is a very special wine. Particular above all for the fact that it is produced from between unusual grape varieties. Its blend, in fact, is composed of 40% Aromera with Johanniter and Bronner at 30%. If you have never heard of these varieties, don't worry. They are certainly not three very common grapes. But they do represent the new frontier of sustainable viticulture. They are, in fact, three varieties that are naturally resistant to disease and, as such, require no treatment in the countryside. A dream for those who are particularly attentive to their own health, but above all to the healthiness of the environment. And it is no coincidence that in just a few years these varieties are becoming increasingly common. In the cellar, the process is simple but accurate, with strict control of fermentation temperatures and an ageing phase on its fine lees and batonage to increase the complexity of the finished product. Pale straw yellow in colour, this mountain white has fine and expressive aromas. In the mouth it reveals a soft and pleasant body, with a natural acidity that well balances the fresh fruit notes, with ripe apple, peach, nutmeg and even a touch of exotic fruit. Enjoyable as an aperitif, this white wine is ideal with vegetarian dishes or with a tasty buffalo mozzarella AOC.
Even centuries ago, the monks of the Bavarian monastery of Tegernsee cultivated wine in Pianizza di Sopra, a hamlet of Caldaro on the wine road. The vineyards in the area provided the wine the Benedictines needed for themselves and for their many high-ranking visitors. St. Quirinus, the monastery's patron saint, gives the Sinn family's winery its name today. An organic and biodynamic farm, at San Quirino they are convinced that even a single bunch of grapes can tell the story of its growth and ripening. About the nature of the soil, the animal life in the vineyard, the wind and the weather. And they are also convinced that this information then passes into the wine produced. That is why in the vineyard, and in the cellar, they work with the utmost respect for the environment and delicately. Wherever possible we work by hand, so that we have direct contact with the vines. In the cellar, for example, we work using gravity, renouncing as far as possible the use of pumps. Traditional methods, however, are also combined with innovative and modern technologies. All done with the sole aim of enhancing the rich natural heritage of the estate.
