  • Sensations The combination of these two varieties gives a rosé that is indigenous and a symbol of the most authentic Sicily. Rosa di Santa Tresa has a pale pink colour with auburn highlights. The bouquet is of small fruits, accompanied by notes of violets and roses. In the mouth it is elegant, persuasive and pleasantly mineral, with notes of raspberry and wild strawberry.
  • Vinification Vinification: The grapes are kept in the refrigerator overnight to lower the temperature to 6-8°C and are then destemmed and gently crushed. The colour of "Rosa di Santa Tresa" comes from natural maceration on the skins in a cold pneumatic press for about 2 hours for the Nero d'Avola and 4 hours for the Frappato. The grapes are gently pressed to a maximum of 0.6 bar. The must remains overnight in the tank at about 10°C to allow the natural static sedimentation of all the solid particles it contains. Fermentation lasts about 12 days at a controlled temperature of 17°C. Ageing: Once alcoholic fermentation is complete, the two wines are blended together and begin ageing on the lees for a period of 3-4 months before being bottled.

  • Terrain Soil composed of 3 different layers: The first is a red sandy layer, poor in clays and rich in minerals . The second is a layer of calcarenite, or clastic rock originating from deposits of sand and silt from the old seabed. The third layer is a layer capable of attracting moisture because it is characterised by a high presence of clay that isolates an area of retention and water reserve.

  • Rosa di Santa Tresa, Terre Siciliane IGT, proposed here by Santa Tresa is a delicate and refined wine. 50% Nero d'Avola and 50% Frappato, the two varieties are harvested by hand at different times. The Nero d'Avola is earlier, reaching perfect ripeness at the beginning of September. The Frappato, on the other hand, takes a few weeks longer to reach the same degree of maturity. The soft and refined colour of "Rosa di Santa Tresa" comes from a natural cold maceration on the skins in the press. Only a few hours, a couple, are needed for the Nero d'Avola and about twice that for the Frappato. Fermented in stainless steel at a controlled temperature, after vinification the two wines are brought together and begin a phase of refinement "sur lie", for a period of between 3 and 4 months. And only then are they bottled. The union of these two varieties gives an indigenous rosé and symbol of Sicilianity, with a delicate pale pink colour with copper highlights. On the nose, the bouquet is of small fruits, including blueberries, accompanied by notes of violets and roses. In the mouth it is elegant and persuasive, with a persistent note of raspberry and wild strawberry. Extremely versatile, it goes well with light dishes, both vegetable and fish, but also with white meats.

    This is the story of two brothers: Stefano and Marina Girelli. Two passionate mountain winemakers whose roots lie in the valleys of Trentino. Looking for new challenges, in 2001 they decided to buy a beautiful estate in Sicily. And to start there, more than a thousand kilometres from home, a new oenological adventure. This is how Santa Tresa, an organic winery, was born, located in the municipality of Vittoria, South West of Sicily. The estate is located about 240 metres above sea level and covers 50 hectares, 39 of which are vineyards. Native clones of Frappato, Nero d'Avola and Grillo, typical and characteristic of the area, have always been grown here. These have been joined by international varieties, such as Viognier which, despite its French origins, seems to have found ideal climatic conditions in this enchanted corner of Sicily.
