"Ephyra" Campania IGP Aglianico Rosato 2021

100% Aglianico. Quality grapes from the company's historic vineyard in Eboli, in the province of Salerno. A curiosity about the name. Ephýra identifies the first nucleus of people who inhabited the town of Eboli. Ephýra, in particular, is the ancient name of Corinth, indicating the deep connection that this wonderful area of Campania had with the ancient Greeks. Medium-textured soils with a tendency to clay characterise the Aglianico vineyards in this area. Here the grapes reach perfect ripeness around mid-September, when they are harvested, with careful selection of the best fruit already taking place on the vine. In the cellar, the grapes undergo a soft whole cluster pressing, a light clarification and subsequent fermentation in steel at a controlled temperature. At the end of processing, the wine undergoes an ageing phase in steel, with weekly bâtonnage until bottling. In the glass, one discovers a beautiful rosé with a soft, coppery colour, brilliant and luminous. The nose is red fruit, such as cherry, citrus, white plum and apple. In the mouth it is firm and well balanced. Fresh, with good consistency. On the finish, the cherry notes perceived earlier return strongly, with a hint of tannin accentuating the freshness. Excellent with fish dishes, fresh cheeses and white meats.
