It is one of the symbols of western Sicily. We are talking about the Grillo grape, an ancient indigenous variety which for years was used mainly for the production of the traditional Marsala. The Grillo, however, is now the focus of attention of wine enthusiasts all over the world, who recognise its great versatility and ability to adapt to different styles of vinification. Pleasantly aromatic, this grape is the basis of this wine proposed by Cantine Europa. Sibiliana Roceno Grillo, Sicilia DOC, comes from a careful selection in the vineyard. Harvested by hand, the grapes are quickly brought to the winery and gently pressed. The must obtained is then refrigerated and sent to the fermentation phase with selected yeasts. The wine is then left to mature in temperature-controlled stainless steel tanks. Straw yellow in colour, the nose is fine and elegant, with hints of white peach and yellow melon. There is a perfect correspondence also in the mouth, where it reveals itself as a decidedly fresh and persistent wine.
