    In the heart of the Côte Chalonnaise, in Savigny-lès-Beaune, lies Maison Paul Chollet, a name that for lovers of Crémant de Bourgogne represents a guarantee of elegance and precision. Founded in 1955, this winery has succeeded in carving out an important place for itself in a region dominated by the great names of still wines, choosing to specialise in what they call “the art of perlage”. Unlike many producers who make sparkling wines merely as a “complement” to their range, here Crémant is the undisputed protagonist. The Chollet family has always believed that Burgundy’s terroir possesses everything required to compete with the more celebrated neighbours of Champagne, provided that uncompromisingly high quality standards are respected. The Maison’s vineyards are located in a privileged position. The Côte Chalonnaise is a narrow strip of land where limestone soils and ideal sun exposure create the perfect conditions for grapes with vibrant acidity, an essential element in producing sparkling wines that are balanced and never flat.
