Merlot "Quirinus" DOC 2019 - St. Quirinus

In the heart of South Tyrol, in Kaltern on the Wine Road to be precise, the St. Quirinus winery cultivates Merlot grapes to produce this interesting red wine. We are located at an altitude of around 400 metres above sea level, with vineyards with excellent exposure and still cultivated using the traditional pergola system. Here, nature is respected and cultivation is carried out under organic farming methods. After harvesting, the grapes are taken to the winery to be quickly processed, respecting the original fruit. The grapes are destemmed and fermented with the marc in steel tanks. Then, after racking, the wine undergoes the classic malolactic conversion and refinement for about a year in barriques. Only at that point is the Merlot Quirinus ready to meet the bottle. In the glass it has a beautiful dark garnet red colour. The nose is a symphony of ripe red fruit, with a subtle sweet spice to give complexity. In the mouth it is velvety and harmonious. Perfectly balanced in every part, the natural acidity is well balanced by the fruit, and in particular by blackberries and cherries, to which are added hints of vanilla and toast. This is the wine to serve with meat dishes, roasts and game. It is also perfect with platters of tasty cold cuts and mature cheeses.

Even centuries ago, the monks of the Bavarian monastery of Tegernsee cultivated wine in Pianizza di Sopra, a hamlet of Caldaro on the wine road. The vineyards in the area provided the wine the Benedictines needed for themselves and for their many high-ranking visitors. St. Quirinus, the monastery's patron saint, gives the Sinn family's winery its name today. An organic and biodynamic farm, at San Quirino they are convinced that even a single bunch of grapes can tell the story of its growth and ripening. About the nature of the soil, the animal life in the vineyard, the wind and the weather. And they are also convinced that this information then passes into the wine produced. That is why in the vineyard, and in the cellar, they work with the utmost respect for the environment and delicately. Wherever possible we work by hand, so that we have direct contact with the vines. In the cellar, for example, we work using gravity, renouncing as far as possible the use of pumps. Traditional methods, however, are also combined with innovative and modern technologies. All done with the sole aim of enhancing the rich natural heritage of the estate.
