"Calpazio" IGP Paestum Greco 2021 - San Salvatore 1988

The name Calpazio refers to the mountain in the heart of the Cilento region, which offers protection to the winery's vineyards. Paestum IGP organic, this white wine comes from a careful vinification of pure Greco grapes. Harvested and selected by hand, the vinification is simple but careful. It starts with a soft pressing and a fermentation in steel tanks, and then completes the process with a further period of refinement, again in steel tanks for about 8 months. The result is a wine characterised by a beautiful straw yellow colour. The nose recalls complex and heterogeneous scents of yellow peach, apricot, grapefruit and quince, with a hint of ginger, white flowers and delicate oriental spices. In the mouth it is dry and vertical. Decidedly fresh, thanks to a natural acidity, but also pleasantly savoury and with a delicately soft finish. Long and pleasant, it invites one sip after another. This is a wine whose body and structure require a pairing that is not overly delicate. If you wish, you can also dare to marry it with roast veal with potatoes.

Just so we don't forget that here we are in a magical place, where nature is able to give us good and inimitable things. Like the wine, of course, but also the buffalo from Campania, unique and inimitable. The company's history began in the mid-1940s, in Boscoreale, on the slopes of Vesuvius. And, thanks to a long journey made of simple but true things, today San Salvatore 1988 has become a beautiful reality, committed to organic and biodynamic agriculture, never intensive. We are in the Cilento National Park, in an area between Stio, Paestum and Giungano. Here are the vineyards and the modern wine cellar, equipped with a 96Kw photovoltaic system that reduces the emission of carbon dioxide into the atmosphere to a minimum. A total of 97 hectares, of which about 22 are planted with vines, with the rest divided between orchards, olive groves and woodland. There are also 450 buffaloes.
