"San Zeno" Recioto di Soave DOCG - Fasoli Gino

The true sweetness, the result of careful processing, can only be discovered when you have the opportunity to taste this interesting wine by Gino Fasoli. San Zeno, Recioto di Soave DOCG, is produced with pure Garganega grapes, carefully selected in the vineyard and harvested by hand. The bunches, only those that are perfectly healthy, are hung in the fruttaio for drying on a vertical net, where they remain for about six months. Then, towards the end of February, they are finally sent to vinification, by means of a soft pressing followed by fermentation for about two weeks and refinement in barriques for 24 - 30 months. The colour is intense and amber, the scents are intense and enveloping. In the mouth it is full, with a bitterish aftertaste that gives a pleasant honeyed and vanilla sweetness.

A healthy environment always pays off. Many of the choices made over the years by Gino Fasoli, a strictly family-run business with solid roots in the fertile Veronese territory, are based on this simple conviction. They have been producing wine since 1925. In 1984 they completed their conversion to the organic regime which then, in 2006, led them to embrace the strict principles of biodynamic viticulture. The commitment of the company's managers has not diminished over the years. Relying on solid foundations of ancient knowledge, they embrace, with enthusiasm, all modern farming techniques that help relive the past. "Our present is but the past of others. And what we are today is inextricably linked to those who came before us."

  • Sensations Colour : Intense amber colour. Bouquet: Sweet spices, roasted barley, nicely ripe white fruit, closes with the sweetness of lime and honeysuckle. Taste: The mouth is round, toned, full of flavour. Enveloping, soft and caressing, but also fresh and savoury. The finish is long and offers roasted and smoky notes with hints of almond.
  • Vinification After careful selection, the bunches are hung in the fruttaio, by hand, on a vertical net, where they remain for 5-6 months. Towards the end of February, the bunches undergo a soft pressing. Fermentation lasts 15-20 days. It is aged in barriques for 24-30 months.
