We are in Umbria. In Montecchio to be precise, in the province of Orvieto. Here we find the Falesco estate owned by the Cotarella family. Beautiful vineyards about 300 metres above sea level. Here, precisely from the vineyard below the winery, comes the Chardonnay that, together with Vermentino, makes up this Vitiano Bianco. The unique characteristics of the soils, together with the care of the vineyards, make it possible to obtain grapes with a balanced ripening that enhances freshness and pleasantness. The Chardonnay is harvested in the first weeks of September, during the early hours of the morning in order to preserve the grapes from excessive heat. In the cellar, after pressing, the grapes are cooled and subjected to cryomaceration. The Vermentino, on the other hand, arrives in the cellar at the end of September. The two varieties, therefore, ferment separately and the wines are blended only later. Straw yellow of beautiful brilliance, the Vermentino dominates the nose, with its direct, floral and citrus aromas, accompanied by the elegance of the Chardonnay. In the mouth, however, one discovers a wine characterised by a decisive and fragrant taste, with the Chardonnay balancing the exuberance of the Vermentino. Thanks to its flat and pleasant body, this Vitiano Bianco can also easily accompany savoury dishes. Excellent, for example, with a nice traditional baked pasta.
