  • Sensations Brilliant straw yellow colour. Fresh, fine and elegant bouquet, reminiscent of lemon grass and grapefruit. In the mouth it is clean, fat and well balanced.
  • Vinification The rather late grapes are harvested at the end of September and macerated at 13°C for 6 hours. Fermentation, at a temperature not exceeding 15°C, lasts about 15 days and, like the following ageing until the following spring, takes place in stainless steel tanks.

    "Benedete" Ribolla Gialla IGT 2023
  • Ribolla is the most representative grape variety of the Collavini winery. And Benedete, Ribolla Gialla Venezia Giulia IGT, is a perfect example. An ancient grape variety traditionally grown on the eastern hills of Friuli, it was initially the Benedictine monks of the Abbey of Rosazzo who promoted its cultivation in Collio. This interesting white wine is dedicated to those ancient monks. It is the result of a particular process. In this case, in fact, the must initially undergoes a long maceration on the skins that continues for about 18 hours. Only at that point, when all the aromas and fragrances have been extracted, is it fermented and then aged in steel. The result is a delicate but intensely fruity wine. Excellent as an aperitif, it goes well with hors d'oeuvres, soups, fish casseroles and shellfish.

    Collavini is a historic, family-run company in Friuli. But at the same time with an international and innovative spirit. We are located in Corno di Rosazzo, among the hills of the Collio and Colli Orientali del Friuli DOC areas. Here Collavini offers a wide range of wines, both sparkling and still, made from native and international grape varieties. Although the variety that most represents the company is undoubtedly Ribolla Gialla. After all, it was back in 1979 that Collavini, thanks to the happy intuition of its founder Manlio (Collavini), started offering it in an interesting sparkling version. And to do so, after years of experimentation, an original sparkling wine-making method was developed that combined the Martinotti-Charmat method with times and techniques reserved for the Metodo Classico. This is the "Metodo Collavini". Today the company can count on a vineyard area of about 170 hectares, from which it produces about one and a half million bottles. And of these, 200,000 are still made from Ribolla Gialla.
