Nature, when respected, gives juicy, rich fruit. It's man's job not to screw it up. They know it well at Concilio, where the grapes that have reached perfect ripeness are delivered and processed with the utmost respect. Harvest by hand and modern vinification, with strict control of temperature and cleanliness. After the first fermentation, the wine rests on its lees for at least 3 to 4 months before drawing. Then, in the spring, the cuvée which will be started for the second slow fermentation in the bottle is created. From that moment, no less than 30 months pass before you can enjoy your first bottle of 600UNO Brut. In the glass the colour is golden, covered by a lively but fine froth. The aroma is complex and elegant, fragrant of fruit with notes of yeast. In the mouth it is fresh, creamy and well structured.
A good story, that of Concilio. The company was founded in 1972, as a result of the union of the Grigolli Winery with the Boschi and Gamberoni company and, since 1990, also with the Social Winery of Trento. The latter since 2018 is the de facto owner of the company and controls the entire cycle, from the campaign to the marketing of products on all markets around the world.
