  • Sensations A white wine of a straw-yellow colour with greenish reflections. Intense, very rich bouquet with olfactory notes of yellow apple, apricot and pineapple. Just hinted at and persuasive is the olfactory note of small pastries due to ageing in barriques. Full and enveloping taste; of great balance with a rich and persistent aftertaste
  • Vinification The grapes, harvested by hand when perfectly ripe, are taken to the cellar to be immediately crushed and destemmed. The must and skins are cooled to a low temperature and remain in contact with each other for about five hours to allow the best extraction of aromas. The grape processing phase continues with soft pressing of the pulp and skins to obtain the must, which is fermented, part in barriques and part in stainless steel. After about 6 months of ageing on the lees (30% in French oak barriques and 70% in stainless steel), the wine is cold bottled and allowed to refine in the bottle before release.

  • CAVIT's Bottega Vinai line allows you to discover all the good regional DOC wines. All produced with grapes from the most vocated areas of Trentino. In the case of this Chardonnay, for example, the vineyards are located in two of the most fascinating areas of Trentino: the Serravalle hills in Vallagarina and the Valle dei Laghi, north of Lake Garda. Chardonnay, after all, is the most widely cultivated international variety in the world, due to its great ability to adapt to different environments, while still producing significant wines. In Trentino, in particular, Chardonnay seems to have found a particularly favourable environment, so much so that it now accounts for one third of wine production. The grapes, harvested when fully ripe, are soon brought to the cellar to be sent to vinification. Then, after pressing, the skins are left to macerate for some time to obtain wines of greater complexity. This is followed by fermentation and ageing in wood on its lees for about 8 months. This choice made by the winery's oenologists results in a wine of great aromatic complexity that presents not only the classic aromas of fresh fruit, apple, citrus and banana, but also a slight note of pastry. A perfect wine to accompany delicate dishes such as a slice of salmon or spaghetti allo scoglio.
