Conubium, a Latin name that evokes marriage, a set of ideas but also the intentions of the inhabitants of a town that had forgotten its own wine-growing tradition, is a Malvasia produced by Cantina Le Macchie. Latium IGT, it comes from a pure processing of the best grapes harvested in the company's vineyards, which are about 650 metres above sea level. Old vines, 40/50 years old, which produce few bunches of very high quality. The result is a finely aromatic wine, delicately structured, with scents of aromatic herbs, fresh citrus fruits and white flowers. A pleasantly fresh wine, perfect as an aperitif, which can also easily find its place on the table. It goes well, for example, with hors d'oeuvres and first courses of Mediterranean cuisine.
We are in the Castel Franco area, in the heart of Lazio, one of the many corners of Italy with a truly excellent habitat for the cultivation of vines and olive trees. Here Cantina Le Macchie, owned by the Di Carlo family, can today count on vineyards that extend over the hills between the Rieti basin and Mount Terminillo. The altitude is between 610 and 1075 metres above sea level, with good exposures towards the south occupied by the later-ripening vines, and others towards the south-west where the more precocious varieties are found. The soil, rich in minerals, favours the growth and development of high quality grapes. It produces wines characterised by a fine freshness and flavour. In view of the altitude of the vineyards, their slope and the difficulty of working them, the winery is a member of Cervim, the certification body for Eroica viticulture.
