"Laven" Bianco Bio Alto Adige DOC 2020 - Cantina Bolzano

Laven is not the usual white wine. Laven, Alto Adige DOC and organic, is rather the result of a unique mix of environmental conditions. On the one hand, the cool but sunny climate of the Bolzano area, with vineyards extending up to more than 600 metres above sea level. On the other, a unique soil mixture of volcanic lavas from which the legendary Bolzano porphyry originates. Laven is the result of a particularly successful blend of three grape varieties: Chardonnay, Pinot Bianco and Pinot Grigio. A wine that is modern in its own way, the result of careful processing. The harvest in this case begins in mid-September. The grapes are harvested by hand and brought to the winery in small containers, the so-called Bins. Vinification is super careful and ends with a slow phase of maturation on fine lees, inside unusual cement spheres. Then a passage in oak and steel tanks. The result is a wine characterised by a beautiful straw yellow colour with greenish reflections. The nose reveals a pleasantly fruity bouquet, with notes of ripe fruit such as apple, pear and peach, to which are also subtle hints of tropical fruits such as pineapple. In the mouth it proves to be an elegant wine, with good structure and a pleasant balance guaranteed by its pleasant acidity. Excellent with savoury first courses, such as fish soup, it is also suitable to accompany vegetarian dishes and medium-aged cheeses.

Cantina Bolzano was founded in 1908, when 30 local winegrowers decided to unite their production under a common banner. Today, the members cultivate 340 hectares of vineyards between 200 and 1000 metres above sea level: passion, experience and commitment enable Cantina Bolxano to produce highly successful wines. New and old knowledge is well represented by the Cantina Bolzano's headquarters: a majestic cube clad in bronze-coloured aluminium sheets, with engravings and openings that resemble a stylised vine leaf. A beautiful way to tell the story, also from an aesthetic point of view: past and future have common roots, and from these roots come wines of recognised quality and fascinating charm.
