Typicality above all else. And in this Barbera d'Alba DOC and Superiore proposed by Borgogno, typicality is simply tangible. It comes from a pure processing of Barbera grapes, from the company's vineyards in Madonna di Como. Here the grapes are carefully selected to bring to the winery only the best, the ripest and healthiest. The fermentation is spontaneous, in cement tanks, and lasts for about 12 days, always at controlled temperature. Then, after racking and light pressing, the wine matures for about 10 months in large oak barrels before being bottled and finishing with another 4 months of refinement in the bottle. Thus we discover a wine characterised by a beautiful intense ruby red colour. The nose has persistent hints of fresh red fruit and spices. In the mouth, on the other hand, it reveals itself to be elegant, round, with a hint of acidity typical for the variety. In Piedmont, it is the perfect accompaniment to meat-filled pasta dishes or tasty meat-based main courses. For those who want to keep things light, however, this Barbera is also very satisfying if served simply as a snack, with a slice of good salami and a board of medium-aged cheeses.
Any time is the right time to drink Barolo. And if the people at Borgogno say so, they are certainly to be believed. After all, this is the most historic cellar in Barolo, dating back to 1761. Even today, the underground cellars represent a rare historical memory of the Langa, where the wines are produced according to tradition, with long spontaneous fermentation without the use of selected yeasts in cement tanks, and above all with long aging strictly in large Slavonian oak barrels.
