TrentoDOC with character. This Altemasi is an ideal bubbly for those who want to approach the world of quality Trentino sparkling wine and want to be sure of capturing all the character of a mountain sparkling wine in its true essence. Made from 60 per cent Chardonnay and 40 per cent Pinot Noir, all the grapes used here come from the slopes of the Dolomites, where the soils are chalky and rich in skeleton, but also from the Valle dei Laghi, and the Valle di Cembra. Here, at between 450 and 600 metres above sea level, the grapes reach perfect ripeness, enjoying beneficial thermal excursions between day and night that favour the development of distinct aromas and fragrances. Harvested by hand, the grapes arrive in the cellar in small crates and, after a soft pressing, are immediately sent to fermentation in stainless steel containers. This is how the base wines are created, which, in the month of April following the harvest, will go on to make up the cuvées to begin the bottle fermentation phase. Here the wine rests on its lees for about 55 months, i.e. just under 5 years, before being disgorged and the bottle filled only with wine, without the addition of a sugary liqueur d'expedition. A fine and persistent perlage, this Altemasi Pas Dosé in the glass has a beautiful straw yellow colour with lively greenish highlights. The nose reveals aromas reminiscent of fresh, sweet fruit, such as apple and peach, with a hint of almond and delicate spicy notes of aniseed. In the mouth, on the other hand, it is full and of excellent substance. A wine with perfect balance and great intensity, it goes well not only with classic seafood hors d'oeuvres but, thanks to its pleasantly dry flavour, also with smoked fish dishes, oysters and shellfish. Excellent with classic linguine with lobster.

Cantina Viticoltori Trentini, in other words CAVIT. We are talking about one of Italy's largest production realities. A large cooperative company, founded in 1950 by a small group of winegrowers aware of the potential of their land. Over the years its success has been overwhelming, so much so that today CAVIT can count on a total of more than 6,300 hectares of vineyards in Trentino, divided among more than 5,200 winegrowers. A colossus, no doubt, but also capable of producing high quality wines. Wines for every day or special bottles to uncork only on great occasions. This is all thanks to the 11 member wineries, distributed throughout Trentino, which allow CAVIT to have the best wines in each area. But it is also thanks to the collaboration with the Istituto Enologico di San Michele all'Adige, with which a viticultural and oenological project was born, destined to give life to fine wines.
