"Amuri di Fimmina e Amuri di Matri" Etna rosé DOC 2020 - Al-Cantàra

With a name like that, it's hard not to feel all the warmth of the most authentic Sicily. Amuri di Fimmina and Amuri di Matri is an elegant rosé proposed by Al-Cantàra, produced from Nerello Mascalese grapes that come from vineyards about 16 years old. A wine with a light but brilliant pink colour, the nose guarantees an explosion of scents. Notes of yellow-fleshed fruit, such as peach and apricot, then small red fruits and hints of citrus. In the mouth, however, it is above all savoury and well-balanced. The citrus notes return, accompanied this time by passion fruit. A wine made to be enjoyed, right down to the last glass. On the table, of course, perhaps paired with elegant fish or shellfish dishes. Excellent as an aperitif Because the love of a "fimmina" (or a matri) must never be renounced.

Al-Cantàra was born from the happy intuition that a good wine is "poetry" and to make it you need "art" - as you can read on the winery's website. It is no coincidence that all the wines produced have names of poems by Sicilian authors and the labels reflect the works of two young painters from Catania. We're in the heart of Sicily. In a corner of paradise that is located exactly in contrada Feudo S. Anastasia in the municipality of Randazzo, 620 metres above sea level. The summit of Mount Etna, not far away, watches over the vineyards and the winery from above. The name Al-Cantàra comes from the river that flows at the foot of the volcano. Although young, the company was officially opened in 2005, has already established itself nationally and internationally thanks to the high quality of its wines, awarded by food and wine critics. Today the company can count on a total of 20 hectares of land, of which about 15 hectares are planted with vines. And among these about 4 are historical, over 60 years old, with a thousand prephylloxera strains. Total production, mostly under the hat of DOC Etna, is about 100 thousand bottles per year. Once again tradition and innovation go hand in hand under the blue sky of Sicily.

  • Vinification For our company, rosé is a product we believe in, so to produce a good product we start from the suitable grapes and consequently, we choose the best vineyards or areas within a parcel suitable for the vinification of rosé, often called, harvesting a "leopard spot", that is to pick those areas with a more pronounced acidity and aromatically more fruity. In the winery the grapes are destemmed and loaded into the press after bringing the crushed grapes to a temperature of 3/6?C, a short maceration and soft pressing with the help of a closed and inert press using neutral gas such as nitrogen, to avoid oxidation phenomena. The pressed must is transferred into the tank and only after 36/48 hours the must is separated from the coarse lees, then the must is ready to receive the yeasts, which trigger alcoholic fermentation carried out at about 16?C for a period of time ranging from 12 to 15 days, after alcoholic fermentation the wine is left on the lees (sur lies) to be able to refine for about 4/6 months, thus obtaining wines more fat, flavourful and long-lived avoiding the 'excessive use of sulfur dioxide. The bottled wine is left to refine for at least 3/6 months in the bottle before going on sale. Aged in bottles. 4-6 months on the lees
